Tortellini with Smoked Salmon Walnut Gorgonzola Cream Sauce Recipe

Tortellini with Smoked Salmon Walnut Gorgonzola Cream Sauce

Ingredients:

  • 1 cup heavy cream
  • 1 Tbs. butter
  • 1/2 cup crumbled Gorgonzola cheese
  • 2 Tbs. minced garlic
  • 1 tsp. dried basil
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1/2 cup crushed walnuts
  • , drained and crumbled
  • 8 oz. pre-cooked cheese tortellini (precooked is best -- if you use dry, cook according to pkg. directions)
  • Shredded Parmesan cheese for garnish

Preparation:

  1. In a large saute pan, combine 1 cup heavy cream and 1 tablespoon butter.
  2. Bring to a light boil.
  3. Add 1/2 cup crumbled Gorgonzola cheese, 2 tablespoons minced garlic, 1 teaspoon dried basil, 1 teaspoon dried thyme, 1 teaspoon dried oregano.
  4. Add 1/2 cup crushed walnuts and 3/4 cup crumbled smoked salmon.
  5. Continue to reduce for 2 to 4 minutes then add 8 ounces cooked cheese tortellini.
  6. Saute until pasta is hot.
  7. Garnish with shredded Parmesan cheese and serve hot.
