Smoked Salmon Pesto Pasta

- 5 ounces smoked salmon
- 1 onion, chopped
- 1 clove crushed garlic
- 2 cups fresh sliced mushrooms
- 3/4 cup pesto
- 3 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh basil
- 1/4 cup water
- 8 ounces spaghetti
Procedure:
- Cook pasta in a large pot of boiling water until al dente.
- In medium skillet, cook olive oil, onion, mushrooms, and garlic until onion is transparent and mushrooms are well cooked.
- Stir in tomato paste, pesto sauce, chopped basil, water, and smoked salmon; cook gently for 5 - 10 minutes, or until desired consistency is achieved.
- Drain pasta. Serve sauce over noodles.
