Smoked Salmon Pesto Pasta

Ingredients:

  • 5 ounces smoked salmon
  • 1 onion, chopped
  • 1 clove crushed garlic
  • 2 cups fresh sliced mushrooms
  • 3/4 cup pesto
  • 3 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh basil
  • 1/4 cup water
  • 8 ounces spaghetti

Procedure:

  • Cook pasta in a large pot of boiling water until al dente.
  • In medium skillet, cook olive oil, onion, mushrooms, and garlic until onion is transparent and mushrooms are well cooked.
  • Stir in tomato paste, pesto sauce, chopped basil, water, and smoked salmon; cook gently for 5 - 10 minutes, or until desired consistency is achieved.
  • Drain pasta. Serve sauce over noodles.
