Smoked Salmon Mediterranean Salad

1/2 c. extra virgin olive oil
1/4 c. white wine vinegar
2 Tablespoons chopped chives
2 Tablespoons chopped parsley
2 medium sized red potatoes
4 plum tomatoes
8 oz fresh green beans (for a different taste, try snow peas)
2 red onion slices
1 head leafy lettuce
1 red pepper cut in strips
1 small can sliced olives, drained
 
Vinaigrette:
Mix olive oil and vinegar, stir in parsley and chives. Salt and pepper to taste.
 
Salad:
Boil potatoes 15 to 20 minutes, until cooked all the way through. Let cool then cube. Toss potatoes with 2 tablespoons vinaigrette. Quarter the tomatoes and cook the green beans in boiling water for about 5 minutes. Drain and cool beans.
 
Serving Prep:
Make a bed of lettuce at the bottom of the bowl/serving plate. Arrange potatoes, green beans, tomatoes, onion, red pepper, olives and Smoked Salmon over lettuce. Drizzle with vinaigrette.
Makes 6-8 appetizer servings or 4 entrée servings.
