What other Salmon Species are generally smoked?
In addition to Sockeye and Pink Salmon, Silver and King Salmon are also smoked. The following describes these salmon species.
Silver salmon, also know as Coho, is used by some companies as a hot smoked salmon. It has a mild flavor and a relatively high fat content. When Silvers are smoked they provide a good smoked salmon product. Our taste tests place silvers just a notch below pink in terms of taste preference. A challenge in using Silvers as a smoked product is the great variation of number of Silvers returning to spawn each year.
King Salmon, also known as Chinook or Tyee, is the largest in size of all the salmon. They are very rich in oil and have a moist, succulent texture. Kings make an excellent smoked salmon product. Our taste tests show it to be equivalent to Sockeye when hot smoked. We do not offer Kings in our line because they are the least abundant of the Pacific Salmon. Kings used in retorts are usually farm raised and harvested when they reach six pounds.
